Prosecco, radicchio, and grappa are the region's culinary highlights. Sopressa, a salami, is used in many dishes. Polenta is a very popular side dish.

Radicchio is the cult vegetable in Treviso. Harvesting begins in mid-November after the first night frosts and lasts until February. This bitter vegetable has a wide variety of uses in local cuisine and is a must-try if you visit during the season.

Montasio DOP is a typical hard cow's milk cheese from the Treviso region. It is also produced in the provinces of Friuli-Venezia Giulia and Belluno , and partially in the provinces of Venice and Padua. After two months of maturation, bacteria naturally render it lactose-free. When young, Montasio is eaten with bread, and a little older it is used for gratinating.

Sopressa is a salami made from pork, lard, salt, pepper, spices, and garlic. It has a wide range of culinary uses, including being eaten raw as a cold cut, baked with cheese, or as an ingredient in a sauce.
