Specialty food
[edit]Zhucheng braised chicken
[edit]The production process of Zhucheng braised chicken is exquisite. First of all, you should choose a chick with a plump shape and a weight of more than 1 catty. After slaughtering, scald the hair evenly with hot water, make a small mouth in the buttocks of the chicken, take out the internal organs, empty them and wash them, and then bend the head and neck to the right, connect one wing of the mouth, and the other wing back. The two legs are broken and the flesh is connected, and the claws are inserted into the cave, making the whole chicken oval. When boiling in the pot, use high heat at first. After boiling, remove the foam and switch to low heat until it is simmered. The deliciousness of braised chicken lies in the seasonings and "old soup". In addition to green onions, ginger and salt, the seasonings used are also sand kernels, cardamom, apples, cloves, chen skin, cinnamon, pepper, star anise and other eight-flavored Chinese medicinal materials, which are packed in a small cloth pocket, tightly tied and put into the soup pot. The soup used for cooking chicken is not changed all year round. Each time you use it, you only need to add an appropriate amount of water and add the new seasoning, so it is called "old soup".
Zhucheng Chicken Breast Balls
[edit]Zhucheng dried chicken, a dish of dried chicken, requires 1 catty of chicken breast, two egg whites, and 5 pieces of chicken sternum. First, put the chicken breast on the cutting board and smash it into pieces with the back of the knife (do not chop it with the blade). Take out the fat film and fine tendons, then add egg whites, stir well, put the chicken sternum into the pot, add water and boil, and then put the meat paste into pigeon egg-sized balls, put them into boiling water one by one, and fish them out after they float automatically. At this time, it is milky white. Take out the chicken sternum, add an appropriate amount of refined salt, and then put the meatballs in. After boiling, serve it in a soup plate, sprinkle with green onions, and serve.
Chestnut chicken
[edit]Chestnut chicken is cooked with chestnuts and chicken as the main ingredients, and wins with its natural fragrance. When cooking chestnut chicken, you should choose eight ripe chestnuts, pick them from the tree, peel them, and take out the kernels. The kernels are tender yellow and slightly green, and the taste is fragrant, crispy and sweet. Cut them into pieces for use; then choose the chicks of the year and the young chickens of the next year, slaughter, mol the hair, empty the internal organs, wash them, and chop them into pieces. Then stir-fry an equal amount of chestnut kernels and chicken nuggets at the same time. Three minutes later, add water, add a small amount of shredded ginger, green onion segments, star anise, refined salt, cooking wine and soy sauce. After boiling, switch to simmer over low heat until the chestnut kernels are cooked, and then boil to eat.
